Default Biscuits n Fatty Gravy 'n More....

Y'all remember that 5 pound fatty I did a week or two ago? Well, I sliced 1/2 of it and froze it for occassions like today. Last night I thawed out about 2-3 pieces worth and added it to my super secret recipe for Sausage Gravy. After making the sausage gravy, by the way, I use 1.5 cups of milk and .5 cup water for the gravy. The recipe recommends 2 cups water, or a 50/50 split for "creamier gravy". Adding the diced fatty as I cooked the gravy allowed the fatty pieces to render some fat into the gravy, so the flavor was throughout the gravy. The fatty had Onions, Japs and a little cheese in it. I poured the gravy over the super secret recipe biscuits I got from KFC last night (they have good biscuits!).

Just so you don't think I've been slacking, I also did a couple of Pastrami's from corned beef this week. I also included a picture of last night's pork and baked tater dinner. Thx for looking in and happy cooking everyone!

It's better AND sooo much easier than anything I could make. Basically with suasage gravy if it thickens without lumps it will be good to go, I say that bcuz of the rendered fat giving the flavor. When I brown JD for B&G I put the Sausage and the rendered fat into the gravy. I also added a little extra ground pepper.

About the only thing better than that is to have a slice of fatty between the biscuts when adding the gravy. Looks good and one of my favs.
