I am gettign some bulk orders for the cornbread and I need to tweak the cost down. Who knows the mixture in Jiffy mix?

Jiffy Corn Muffin Mix Ingredients:

Wheat Flour, Degerminated Yellow Corn Meal, Sugar, Animal Shortening (contains One or More of the Following: Lard, Hydrogenated Lard, Partially Hydrogenated Lard)Less than 2% of each of the Following: Baking Soda, Sodium Acid Pyrophosphate, Niacin, Reduced Iron, Thiamine Mononitrate, Riboflavin, Folic Acid.

Brother you just cut my cost down by more than a half if this works. This is for my soulbread that has those onions on the bottom, and all that butter and cream and sugar added at the end.

Here's one I got off a MICROWAVE Forum....Maybe you already have it. Sounds like it comes out lookin' like a giant donut.

Ingredients
1 cup cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/3 cup canola oil
1 cup milk
2 large eggs

Combine cornmeal, flour, baking powder and salt in a mixing bowl; stir in oil.
Beat milk and eggs together, then mix with dry ingredients.
Pour into a six-cup plastic ring mold.
Microwave on High for four to five minutes.
Let rest five minutes before removing from ring mold.

Ya know, Funk, I really like the corn bread recipe I used. It's easy to modify, too. Want it a little more moist? Add some more oil or butter. Want it more sweet? Add more sugar. Want some crunch? Add some pine nuts.

I really don't like spending money on mixes. I make my own rubs and do all my baking
from scratch. The only mixes I buy are Jell-O and brownie mix, and I might make those
once every two years or less.

The only thing about my recipe as opposed to Jiffy Mix is that mine turns red onions
green when I make your soulbread! Probably it's some of the chemicals they add to
the Jiffy Mix to extend its shelf life. It's easy to switch to white onions, though ..

Basic Corn Bread

1 cup corn meal
1 cup flour
4 teaspoons baking powder
1/4 cup sugar
1 teaspoon salt
1/4 cup melted butter or oil
2 eggs
1 cup milk

Bake at 425F 20-25 minutes in a greased 9x9" baking pan.

Just made a batch of cornbread for supper - best batch yet. All because I had no eggs and used mayo (miracle whip) as a substitute for the egg.... Wife and daughter loved it - more moist than usual...

1 cup corn meal
1 cup flour
1 Tbsp Baking Powder
1/4 cup sugar
1 tsp Salt
1/4 cup safflower oil (or veggie oil)
3 Tbsp Miracle Whip (or Mayo)
1 Cup milk

Stir dry ingredients together well in one bowl. Stir wet well in another bowl. Combine wet and dry, bake in 8 X 8 pan at 400 for 20 mins (or at 375 if using glass pan).
