Default Brisket and baby backs

Doing a 7lb brisket and 5 baby backs for my daughters birthday on Saturdy. They are rubbed up and looking good! I am curious about the brisket....took 30th a couple of weeks ago at the Pleasant Hill, MO contest. You know, when you clean your smoker, it cooks a LOT faster! That brisket was SO flavorful, yet WAY overcooked. Can't wait to see what the difference brings!

I will post some pics when they are done!
