Default New trailer build

Frame done, 120 gal barrel with fire box mounted. working on 22 by 46 in. charcoal and propane enclosed grill with 8 in. warming rack and side burner for chili. Thinking about a 22 by 30 in. skillet for Philly's. Thinking propane burners under a quarter in. plate of stainless or polished steel. I know nothing about skillets/flat tops. Please help!

your standard commercial flat-top is between 1/2 and 1 in. thick, you need a lot of mass to distibute the heat evenly. If you look around you might find one you can use for cheap. And don't use stainless, the polished steel will heat more evenly and hold up better, just keep it seasoned well.
