cut up a deer hind leg and here are the results no marinade just some cavenders greek seasoning.mmmmm

great.Trick is not to let it stay on too long.That Cavenders is some of the best stuff! Even some of the thinner pieces that dried still taste great.

agreed. I have noticed alot of people tend to overcook it, and it doesn't taste great when that happens. How long did you smoke it for?
