Default Favorite wood

Just curious What kind of wood is your favorite, for what and why?
I saw the BB Pitmaster show Sunday night and Myron gave his secret wood as peach, I find it hard to believe that Myron wood (lol) give anything away. Any thoughts?

Apple because it is a mild, fruit wood, that goes well with anything.

Pecan because of it's milder sweet flavor and i have twotrees in my yard.

Cherry. It's a little stronger than apple, lot less harsh than hickory.

Apple & cherry mix is another fav..

Pecan and Apple... Pecan mostly for beef and apple mostly for pork. Sometimes, when available, I'll mix a little cherry in with either.

Is this one of those "if you were stranded on a dessert island and could only have one....." type of questions? ;)

My personal favorites are cherry and hickory. I like hickory on just about anything, even poultry when handled lightly. Cherry also goes with just about anything, has a milder smoke than hickory. The two mixed together do well too.

I use a mixture. Maple for heat with some apple and a lesser amount of hickory for flavour. This is dictated as much by cost as it is by flavour. Got lots of maple trees nearby, the in-laws have some apple trees that they have been trimming and hickory is expensive; you can only buy small bags of chunks in the local Home Depot, although I will pick up bigger bags of chunks when I drive into the US. I did notice that a neighbour has a big shagbark hickory tree in his backyard - do you think that he would miss it, if it disappeared one night

I like red oak. it works well with everything, and burns hot.
