Default Big butt on a little smoker....now done and perfection

It's a nice brisk sunny day 32 degrees outside....raking up some leaves and smoking some pork.

Rubbed down with some olive oil, tuscany seasoning, Jamaican jerk and some Sweet Seduction and the smoker stuffed with apple wood.

Did one of those a few weeks back at my daughters house (11.8lb butt on a 18.5OTS). Tight fit. Came out great after 11 hours.

Great idea. If ribs take 90 min I figure that butt should take about 4 hrs.

Nope I do butts at the regular method....ribs are different

All done with good medium soft bark and in about 6 hours. Very happy, good SR and falling apart.

Here's after pulling from the smoker but before the full "pull"

Looks awesome. The very first meat I smoked was a 7lb picnic shoulder and looked much the same. This has now put me in the mood to do one tomorrow. Looks like a will be running to the store in a few mins here. Hope it tasted well too.

It was around 10 lbs but it was a flatter butt and really filled the mini-wsm pretty good.

It might have been 275-300 and took about 6 hours....fell right apart.
