Default QUICK easy dinner!

So being the holidays I was terribly rushed for time and energy to get dinner together tonight. I scanned the pantry and fridge to come up with this VERY tasty quick meal. You guys know I hate recipes (when I put them together) so this is pretty thrown together and measurements may not be exact. And no it's not Q per say, but the chicken is cooked on the grill :)


Creamy Grilled Chicken Pesto Pasta.

1lb thin chicken breast
to taste: olive oil, garlic powder, salt pepper

2 tbsp butter/margarine
8 oz cream cheese
2/3c chicken broth
3tbsp prepared pesto (heaping!)
3tbsp milk/half & half/cream
1/4c grated parm (fresh is best but in a tight spot......)
1/2 box fettuccine cooked

Directions:
coat chicken in oil and seasonings (next time if time permits I'd brine briefly). Grill till just done.
While chicken is cooking/resting in a large pan over medium heat melt butter. Add cream cheese, stir constantly until melted. Add chicken broth, pesto and milk. Continue stirring until combined, add parm.
Cut the chicken into bite sized strips, add to sauce. Continue cooking over medium low for 5 minutes.
Spoon over hot pasta.

That looks tasty! Nice photo, too.

I'd be tempted to throw a few fresh basil leaves or some fresh peas in there to give it some green. Darn it, now I'm hungry again!
