Default Chuckie and Pepper Panini

Smoked this chuckie on Sunday to use for meals this week.. I find myself throwing extra meat on whenever I have the Shirley running just because there's room..

It was crazy marbled, and so good.

I vac sealed it (after qc). Tonight I put the bag into a pot of boiling water and let it reheat. While it heated, I sautéed a bell pepper, poblano, an onion, some jalapeño, and some garlic.

Chuckie, warm and sliced

Cut a loaf of ciabatta in half and then cut it open. 2 slices of Wisconsin white cheddar on bottom, then loads of chuckie, then peppers and onions, then a little bourbon bbq sauce, some Dijon mustard, and 2 more slices of cheese.

Then into the cast iron redneck panini press

Done! Well the right one is...

This did not suck.

That's what I call a custom/one off panini press. I like it!
