Default First smoke on new grill.

I did the first smoke on my new grill. It did not go as well as I thought but it was brand new.

The first thing that went wrong was the side ash pan to the side fire box broke, 2 spot welds broke causing the pan to not close all the way, leaving a 1/4 inch gap. Second I noticed that the lid to the box was leaking smoke, I will have to find a latch to fix that. The problem is that the fire box is not like the other Char Griller boxes. This firebox came in 2 pieces so it is going to be hard to find a good latch.

I cooked ribs. I noticed that the grill surface closest to the firebox opening was 20 degrees hotter than the one over the water.

I think I will have to drill more holes near the end of the grill. In the pic above, I have the tuning plate against the diverter. underneath the plate I have 2 fire bricks. On the left side of the picture I placed to bricks to hold up the water tray.

Overall everybody loved the ribs. I think they were tough due to the inconsistent heat. The heat would fluctuate between 240 and up to 300. I used Royal Oak lump with a few sticks of apple wood.

I started a half chimney of lump. Inside of the charcoal box I made a bed of unlit lump with one medium sized stick of apple wood in it.

The temp at first held steady at 240 to 260, but as the damn ash pan began to break the gap got bigger. I shut the vent completely on the fire box, but it did not help. Well at least I have another ash pan on the way to me now. I called and complained to CharGriller, they are sending me a bottom section of the fire box and an ash pan.
