Default My version of Jambalya Pizza w/Pron

I was making a batch of Jambalaya for the week and wanted to also give Jambalaya pizza a try. I had andouille sausage, I smoked some boneless skinless thighs with Todd's Bayou Dirt, and had some precooked shrimp.

Didnt have any dough around so I used pita bread which actually made for a really good crust.

Sauce with some red onions and red bell pepper. I then sprinkled on some more of the Bayou Dirt and some Cayenne Pepper. Then I added the sliced andouille, chicken, shrimp and cheese. Then another sprinkle of dirt and onto the BGE at 450 dome until the cheese melted.

I was pretty happy with it. If I had to change something I would try to get the sauce more cajun.

That looks like a primo pizza. Never thought about a cajun one myself. Got to give it a try.

Thats a good looking pizza Buster....Andouille sausage looks good. A good grade has higher chunk to ground ratio. What brand is it?

I dont remember the brand. I bought it at Restaurant Depot and there was about 15 links per package, so I separated and vacuum sealed. This was my last pack. I think it's the only one they sell there.
