Phu, no need to bring any, I'm still working on this case of mexican beer... I usually drink 3.2 beer, this stuff is a bit stronger.

I try to either smoke the onion slices low and slow so they won't cook or smoke the heck out of them for a short period of time. I had other things in the drum this time so I went for the low and slow approach.

Nice rings! Usually I smoke an onion to use in a sauce I make, those are awesome though, would have gone great with my dinner! Wish I'd have seen it sooner.

I put olive oil on them and cracked black pepper. Then wrap them in bacon.
