Default UDS Turkey

Plan to do a practice turkey on my UDS.
I'm going to spatchcock, brine, brush with EVOO then rub with
Cavenders Greek seasoning.

I've seen several done on this forum in a pan instead of directly on the grate.
Should I put it in a pan or on the grate?

I believe the pan is under turkey (lower) rather than turkey in.

Thanks for the replies. I think that the ones that I saw in the pans might be there to collect the juices for gravy.

Be sure to post pron! Let us know how it turned out.

Sometime in the next two weeks, I too plan to do a trial run on a turkey. I've been asked to smoke "the" turkey for Thanksgiving this year.

Mom, who is one of the best country cooks by the way, always cooks a turkey each year, is having knee replacement surgery just before Thanksgiving...
