A Chipotle Cremosa Pork Butt

I smoked a big hunka pork in my drum the other day... I like to have the meat on hand for easy meals.

I injected the pork with a mixture of beef broth, cayenne, onion and garlic powders.

Then rubbed the outside with Zaaschila Chipotle Cremosa sauce...

and sprinkled with cracked black pepper....

Then into my drum for a little over 10 hours....

It was tasty. I like the flavor of the Zaaschila and the spicy injection.

That is an interesting combination of ingredients for an injection. I will have to give that a try.

Another great cook neighbor! jeanie, is the Zaaschila sauce a regional thing? Like Ron, I don't remember seeing that here. Interesting using beef broth, may give that a try.

WOW Jeanie. That looks GREAT!

I'm gonna have to try to vary up the rub with some sauces like that. Looks like a great idea.

How do you like those space saver bags from the hand held machine? I've never tried any space saver bags (infomercials typically turn me off on the product), but I see lots of people talking about them. I've been filling up the fridge with left overs since joining this site.

My local grocery store carries the Zaaschila. I like it on tacos, sandwiches, just about anything. :)

Gary...thank you. Not many pics of me, someone had to sneak up behind me to get that one.

82, I like the little hand held pump. It works fine, the bags are a bit high priced though. I used to use baggies and a straw... works just as well.
