I love sturgeon but never cooked that way - Awesome!

WE used to be able to get 1 sturgeon per day. Now it is 1 per year - IF it is even open to fish

It is a white fish. sort of a Halibut taste but a more dense meat. Make great fish and chips and has big flakes of fish. Pretty solid when smoked (can get rubbery if over smoked)
