OK, here is a recipe I have been making for years. Never wrote it down but made it tonight (nope... no pics... evidence is gone!) and figured I would share. Simple as hell but really tasty. Play with it and make it yours....
Hope you like it.... Butter Fried Chicken 1 stick butter ˝ cup canola oil (lard might be good?!) Heat this in a 10-11 inch skillet (vertical sides) Use chicken thighs and skin them,10-12 depending on size Liberally cover chicken in granulated onion and fresh ground pepper Then use the salted seasoning of your choice. I use Adobo Caliente’, again a liberal dose on both sides. When the oil is to heat put the pieces in. This is hard to explain but this is a medium heat fry. You want the butter and oil to infuse just a bit into the meat not sear it shut. Entire cook time should be almost an hour with a light crusty texture to the skinless meat and the seasoning and butter flavor throughout. It is awesome cooked on the grill in a high sided cookie sheet as well. My kids love this recipe.
