Default Beer Can Chicken Stuffed Poblanos

This is kind of a continuation of this thread. I took half of a beer can chicken, chopped it up, added some ground up cumin seeds, chipotle flakes, salt, pepper and ancho chile.

I put some chicken on cleaned halves of poblano chiles and topped with queso Iberico, a cheese from central Spain made from cow, sheep and goat milks. Nice and mild, very good.

I smoked them at about 250 using beechnut wood again, until the peppers were softened but not complete mush. I topped them with sour cream, chopped green onion, diced heirloom tomatoes and a bit of a dusting of powdered ancho chile. If figured two of these are about 5 points for weight watchers (keep the sour cream down).

The poblanos give a nice amount of heat without being too much for anyone, with really good flavor overall.
