International Pig Roast...lots 'o' PRON
Sorry I’ve been away Brethren, I was on a long deserved vacation at my in-laws home country of the Dominican Republic. I am posting a few pictures that I think you may want to see.
Be warned, these are linked on photobucket but are still numerous. Also, there are semi-graphic photos of a headless pig, that some of you may not want to see. Alas, I think most of you will be ok with these. On to the PRON! The following few pics are on the mountain side of Santiago, in the DR, called ‘La Loma’, it sits somewhere between 2-3K feet, not very high, but a very steep climb on an unpaved road. The land and shack here belong to a lovely old lady who agreed to cook for us if we supplied the food, she has known my wife’s cousin for 15 years or so. She made a great Goat Meat Stew, the picture does not do it justice. Take a look at her kitchen and cement stove, she lives on the generosity of others and tends to her land on the mountainside. Yep, this is a real Outhouse… On to the Pig! My mother in law raved about my cooking in the UDS to her family and that, somehow, led me to prep and cook a whole pig! I have not done anything bigger than a Packer with my team. Now I am miles away from any of my tools, seasoning and cookers and you expect me to do what? What would a Brethren do? Aw, funk-it, here goes nothing! I can handle this... But wait…I still need a cooker that can handle a complete 50lb pig…what’s that? A ‘Caja China’ I know of this, I think Bob Brisket has one…I can do this…I am Brethren! Bring it on! Ok, she’s on the rack, in the box and on fire, now we sit and wait…pass the Rum please…look how nice the back of the farm looks… Time to flip the pig! Ladies and gentlemen, she is ready! At the serving tray, getting chopped up and sorted out, fed well over 30 people with left overs…I done good brethren. Holy carp, a stray cow wandered in and heard me speak of brisket and she ran! Gorgeous pig.
We spent a couple months in Luperon on our boat on the way to the Eastern Caribbean and loved the place and the people. Good cigars, great rum, and Presidente Beer. Risked life and limb on the GuaGuas travelling around. Life was good The D. R. is a jewel. Chuck |

That is quite a story!
What are the stacked up tin cans used for? How did you get the fire off of the top when it was time to turn the pig? What did you use the foil for? Did the pork have any smoke flavor? Pork looks good.
