Has anyone heard of smoking some butts for 3/4 of the recomended time, and removing them off the smoker (before they are 100% cooked)... placing them in the fridge.... and finishing the smoking 12 hours later?

Very doable but your heating the meat twice, thus risking drying out and mushy texture, but yes, it can be done.

it can be done if necessary...
but more importantly than 3/4 recommended time, make sure you cook it to an edible temp of 160 degrees before you pull and cool..

I would plan ahead to cook them all the way, pull, vac-seal, and freeze or refridge until you need it. Reheat the unopened bag in hot (not quite boiling) water. Won't be able to tell it was precooked. JM$.02
