Default Yesterday's Butterflied Yardbirds

Did two butterflied chicken on the OTG, rubbed one with Yardbird Rub and the other with Jamaican Firewalk. Served with potato salad and Keri's Hog-Apple beans that were left over from the day before.

looks wonderful! question--did you just cut out the backbone?--or did you do something with the breast also? I tried this once ,but it didn't look as good as yours , and I wasn't overly happy with my butterfly result!

Very nice! Nice photography, too!

Maxwell7, I'll let Noskos answer for his birds, but when I spatchcock a bird I cut out the backbone and then use my thumbs to remove the keel bone where the breasts join. You can also just cut through it. it helps the birds lay flatter.

I take the spine out. Than turn over the birds, head side towards me, us a little knife to cut through the white cartilage until I hit the keel bone. Than I "free" the breastbone from the cartilage with my fingers where the breasts join, run my fingers along the keel bone until it comes loose from the flesh and pull it out.
Hope you can make a mental picture out of that!

Ron L--bless you for the link with the spatchcock video--I actually saw this on the food channel but had no idea where to find it , and it was long enough ago I couldn't remember how to remove the keel bone.I sent the link to my dghtr in Mckinney texas. All my kids -and me--are gathering there saturday and for the week and we'll do 2-3 for the bunch. Again MUCH thanks!!!
