been realy happy with my non foiled product. i don't use foil nor water. nothing is dried out.

I use a water pan and have had no problems. When I BBQ fish I wrap them in large Banana leaves and they are really moist and tasty. I may try this on a big chunk of beef this weekend just to test the theory. I'll try anything once and I really don't like the idea of using foil (just personal).
Let the smoke roll, I've got all day........
