Default Dessert Suggestions?

My subdivision pool manager asked me to provide the food for the summer luau we are having. No problem, I'll enjoy it. The tough part is she wants a dessert. Probably going to be at least 150 people there. Won't know for sure until 3 days prior.
I thought about doing dump cake and a quick search on the site confirmed that may be the best way to go. Dessert gets costly in a hurry.
Any suggestions on what some of you all do that is not labor intensive or costly would be greatly appreciated.
The plan for now is Pineapple/cherry dump cake and apple spice dump cake.

Chocolate eclairs, cool whip vanilla instant pudding, graham crackers and chocolate...goes together in about 15 minutes and can feed a huge crowd. The only draw back is that it need to be made the day before. I have never had any left over and usually people are crying for more. PM me if you would like the recipe

We normally do an assortment of bars. They cook up in a sheet pan and can be cut to to whatever size you like. A few sheet pans is fairly cheap and easy to do, can be done the day ahead of time or same day.

Make you own Dessert Burritos. Heat up your tortillas in foil on the grill and serve with mixed berries, bananas, crushed oreos, carmel ice cream topping, and whip cream.

We do a lot of grilled fruit, peaches, apples, pears. If the grill is hot and ready they can be knocked out quickly. I usually brush 'em down with one of our fruit glazes, but if you reduce some balsamic vinegar down by half and brush it on while they're grilling they come out screamin. Serve with whipped cream or ice cream.

For Hawaiian Luaus I usually make Pina Colada Rice Pudding. The ingredients are in expensive----it can be made in large batches----it fits the luau theme and people love it. I make mine in cast iron dutch ovens. If I am making a "show" of it I hang the dutch ovens over a fire, or if I am just cooking without showmanship, I set the dutch ovens inside the smoker.

For 50 people put 2 cups of rice and 2 cups of sugar into a dutch oven---add 2 quarts of whole milk and one quart of canned coconut milk. Heat the concoction until the rice begins to expand and swell. Dried fruit can then be added----Pineapple, apples, raisins, cherries----any dried fruit. For Pina Colada I usually just add pineapple with a few dried cherries. Add desired spices -rum extract-nutmeg-cinnamon and continue cooking until rice is tender and recipe has thickened. Stirring fairly often so milk does not burn. When it is thick remove it from heat and let it set. If it gets too thick it can be thinned with milk or rum.

One thing I used to do was make ...Chocolate Peanut clusters.
You can make a lot of them pretty easy , and make them a few days
in advance if you want too.

I would just get a big bag of chocolate chips (or a few bags if you need them) dump them into a LARGE stainless steel bowl over a pot of lightly
simmering water. Once they start to melt, just stir them gently, until they
are all melted. IF it is really thick and hard to stir, you can add a little
butter or vegetable oil to thin it. DO NOT use water or milk; as this will
make the chocolate turn into a big solid lump.

Once it is melted; add lots of peanuts and spoon them out in consistent
size "cookies" on Aluminum Foil on the counter or a table.
Let them cool and solidify for a few hours (or overnight) then you can
wrap them in plastic wrap; or put them in baggies or just put them in
a large tray and take one out as needed.
