Default First Brisket

After some lunch and a nap, here is the results of my first brisket. Very good.

(taken about 3 hours from being done)

(After resting)

(lunch)

I used to not be big on beef, but on a recent visit to Hot Springs I had lunch at the Whole Hog Cafe. They had nice brisket there and got me interested in beef. Inspiration is priceless.

Nice job! The bark looks a little dark to me, but that could just be the picture.
