Default Anybody smoke Bear meat?

A friend brought back some bear meat from a hunt recently. Told him I would smoke it for him but have no idea on what to do with it. He said he has it all cut up to large steak sizes. Any suggestions from the brethren appreciated. Should I smoke, grill, what ?

I've never smoked it, but I have grilled it hot and fast with good results. How much fat is in the cuts? How thick?

im interested in this also..alot of bears around here lately,& i know it stews well,so i think low& slow might be the ticket..hopefully somebody can chime in with some experience..

I have done stews and grills and one smoke with bear. I used caul fat on the bear as it was really really lean when I smoked it. a friend gave me the idea. It was fine. Nothing spectacular or memorable.

my buddy who has eaten a lot of michigan black bear says to marinate it in a cheap wine for 24 hours, then put into a crockpot.
He said he would never try and smoke it as it carries a very strong odor that the wine marinade takes away a lot of it.

I would also not recommend smoking bear meat. I cooked with bear in a restaurant and it is typically extremely lean. If you are going to smoke it definitely marinate or brine the meat as best you can and then put the caul around it or a basketweave of bacon (then again anything with bacon aeround it is usually pretty good.)

The other idea is to leave it in the fridge for a couple of days and while that is getting cool throw a butt in the smoker and just call it bear :-)

I cooked a loin chunk in a crockpot once and then another time grilled kabobs marinated in salad dressing durring a pig roast. Never tried to smoke it. The grilled ones were very good. Also grilled snapping turtle that same day. Kind of like eating bad shoe leather.

Thanks for all the help Brethren. Looks like we are gonna skip the smoker and grill, possibly try that wine and crotch pot.

I smoked a bear ham for a buddy a couple of years ago.
I used the fat cap from a butt to cover it and injected with my version of
Dr BBQ's Big Pig injection. (1st book)
Cooked it just like a butt and pulled it.
My buddy and his family said it was really good.

The only smoked bear that I've had has been sausage. It's good, but quite sweet.

You should have saved the turtle for a turtle sauce piquante
Definitely would not have tasted like shoe leather.

Default dutch oven it

Ive taken three bears from AK. I dutch oven fry them in oil and salt and pepper brown all sides add beef broth 1 or 2 cans and a couple of cans of black beans then put them in the oven at 225f for 4-5 hours or until the meat is tender. When I do this nobody even knows it is bear meat.
