Thanks to all the great infor found on this forum, my boy and I are hook, line and sinker on UDS cooking.
Here are some shots of a quick high heat chix cook last week, was worried about cook time since it was a weeknight cook, but 325-350temp finished the chicken by 9:00. Great since I didn't get the UDS rocking until 6:45.

Started skin up, then flipped after 45min. After cook to temp, pulled, prior to glaze.

Glazed, placed on drum for a few, then pulled off. Dang thighs just wanted to fall apart.

good looking yardbird there man,i love those leg 1/4's..usually on sale around .69 lb.& they always seem to turn out great..& like you said perfect for a week night Q!..
