Default Saturday Discada Tacos and Family Fun...

For the Pico de Gallo!

The best corn tortillas come wrapped in paper! Talk about fresh. THey were only about 2 hours old!! Just babies!!

Browning the rice. Tried Jasmine rice this time. Best dang Spanish rice I've ever made.

Rice........done.

Bacon and baloney getting browned for the Charro beans.

Bacon and baloney..........oh my!!

Get back up there.........that little piece of baloney like the HOT tub!!

Mexican chorizo for the beans.

Flores Meat Market makes a mean chorizo blend. This one went into the discada.

GOOD STUFF!

Discada meat goes in. Basically thinly sliced round and sirloin marinated in Wooster and Mojo Criollo.

Browned until most of the liquid evaps.

Just stand there and watch it drain. This is why I don't make discada too often...............Heart Attack Central!!

Tortillas getting some color and flavor.

Taco meat..............DONE.

My plate.........and a special treat, Mom made cupcakes!! YUMMY. NJOY.

Dang man, that looks fantastic!

I've tried making the Spanish rice before but it didn't turn out too well.

Any tips/recipes that you wouldn't mind sharing, neighbor?

the trick to Spanish rice is once you add the water/tomato sauce etc, you DO NOT stir it anymore. just let it sit until the water evaporates. that's the trick with Mexican Fideo too.
