Default a little help

Got a gig coming up soon at 12 we are serving wings, cheese and cracker platter and steamers for 190. have never done steamers for this size crowd and they are mostly women. Anyone with a quantity I could go by. My experience with women and clams are they usually don't eat much. A bushel holds 400. thinkin 1.5 bushels. The main meal at 2 is prime rib, chicken breasts, ribs beans, salad, and corn on the cob.

Depening on the clams you are using. If you are using piss clams you will need a lot less because less people will not eat them. If you use little or top necks be prepared for them to get destroyed. I would average about 6pp if using the little or tops, 3 pp using piss.

Seems like 1.5 bushels might be a little short. At 6 each, probably Little Necks or similar, 6 x 190 = 1140/400 = 2.85 Bushels, not counting broken or bad clams. Looks like 3 bushels minimum. And even at six and women eating them, clams are not at all filling and some could probably do a dozen easy. Good luck which ever way you go. You might consider steamers in a cheese cloth to control amounts, just a thought.

Yeah I agree 1.5 bushels is most likely a bit short I would do 2.5 bushels considering your other menu appetizers. I just did a small party for 80 and they easily killed 1.5 bushels, a couple of the smaller gals ate 2dz each! The majority only ate a few each.

I serve them in high polished stainless steel insulated bowls, melted butter & parmesan cheese, when there gone there gone!
