Throw a big pot of beans and some Brussels sprouts into that equation and I think it would work.

Okay here goes....I have a list of three or four ideas, mostly Mexican and Italian delicacies, that I was ready to cook up tomorrow. With Memorial Day weekend coming up, I spent a couple of hours earlier this week reminiscing about past camping trips with one of my buds at the local watering hole. Soon the conversation drifted to Brook trout and of course frying them on the campfire or on my little brass gasoline stove. These trout are only about about 7 inches long, but are just delicious. The only supplies I take for frying them are corn meal, cooking oil and a skillet.

Earlier in this thread, I did mention the danger factor in frying in the cooker, but I do have 3 decades of campfire cooking under my belt, with only one visit to a plastic surgeon .... and well, I still do it. So last night, I did it again for this weeks Throwdown. This is NOT deep frying, it's pan frying. It's altogether different. There is maybe a cup or so of oil involved. Here is the cook from start to plate. I used a split tail section of a salmon fillet and some shrimp. It is served up with a cucumber dill sauce, and a Mongolian style pasta veggie stir fry. The top shot is my entry.

Chicken is this week, but the deadline for submitting photos for last weeks Corn Meal competition is 9pm tonight. This way people can cook on Sunday and post their pics on Monday. It's this way each week if you look at the rules closely. Fine print ya know.
