Default **Apple Creek Timber, Pizza and Klose Encounters**

OK- Maybe some of you have seen my posts of the BBQ or CASI Chili Classes I've attended at Apple Creek Timber Inc. in the past-well this one was another hit! I rode down with Larin(Hog-Que-Holic) and he debut his mammoth Drum Smokers with dual 26" cooking grates and they did not disappoint!

Here he is with one next to my 3822 (that we didn't fire up and made a good table)





The Guest of Honor was David Klose along with local custom pitbuilder Paul Reading, Washington and Oregon State Championship BBQ cook Ty Staley, and Naples Italy trained pizza chef and Mobile Wood Fired Oven caterer Carey Kemp and of cours the host Rick Naug. Met a few new cooks that I hope to see competing soon in the Pacific Northwest. Here are some pics of the day-I'm hoping Hoggy will post some pics too.

Now, this one looks a little spooky. Isnt that pit a little much for that trailer?

I helped Marty move the Klose on the trailer to hook it up to his truck and it seemed to be solidly mounted. It is a pretty sweet setup!

Last time I was there, Rick was cooking Duck in a cast iron pan in the oven for our pizzas-fantastic!

Carey Kemp is a Maestro with the pizzas- Rick keeps a fully stocked refrigerated pizza prep station with all the fixin's- but the fresh dough, fresh mozzarella, basil and sauce from Inferno-simple as they sound were some of the finest I've had! And they were cooked to perfection in @ 90 seconds!! Remember-this was a BBQ class!

I dang near cried when I saw that I missed the class, especially since it was 1/2 mile from my place! Brian is dead on about the pizza, when we did the chili class was hard not to go back to making chili and not keep on making pizza's!

So Brian, where did the big ash drum come from and what is the green lid one about?

Hogman got 3 of the 27" x 42" drums from Grainger, and the one with the green lid was Tim Lillards-he had the Guru DigiQ II hooked up to it.
