My personal favorite, Brunswick stew. Of course that means you're gonna need to pull that unpulled pork, or chop it. Nothing makes a good Brunswick like a nice, smokey, leftover pork:

Finney, I would cept a co-worker donated a pork butt for me to bring in. So, I acually did 3 butts this past weekend. The one I brought to work, I started it at about 5pm and brought it into work the next morning, straight off the UDS. :)

Here's one I saw this weekend, Asian Pork Wraps. When I saw that it called for "1 lb of shredded bbq pork with no sauce" I saved it thinking I might use it some time. I haven't tried it yet.

Double ditto.
Seems Tex-Mex food is made for leftover pulled pork. Enchilladas, burritos, tacos, quesidillas, etc. I've even heard folks make Mexican lasagna.

Try BBQ pizza... you can do it from scratch with the dough and all, or, if you are in a hurry, take a flour tortilla, put your favorite BBQ sauce on it, not too thick, put your pulled pork on it and any other topping that you may desire and cook it...
When I'm in a hurry, I throw it on a stone at 450* for 7-8 minutes...comes out just right. This is good with brisket too.
