This was my first chuckie! Did it a little on the high heat side because of time constraints. Held temp around 300. It was not fork tender but it was very tasty :razz:


Started with a 4.5lb roast. Rubbed with Bovine Bold (Sorry missed that pic)

Drum was smokin nice with mostly cherry and a piece of apple.

After about 5.5 hrs here it is. I put it in the foil pan at 170 degrees. did not cover just left open and added a cup of beef broth to the pan. Had a nice bark.

That looks really good! Nice Job! I'm doing some tomorrow, for cold cuts...
 
That is just the way I like chuck, in chunks. That sure does looks good.
