Default wood type and its use

BTU's Im curious about wood and how its used.
Are certain sized logs used? Is it the BTU that more important then the type of wood?
Do people cut logs to a certain diameter ? size, shape?

Edit: This post answered your original post which you changed 45 minutes after I answered you. ???

Your original post said " Until can get to a competition - Im curious about wood and how its used.
Do you use a specific type for specific foods?"
