Default UDS charcoal Q

When you guys fire up your UDS, how much charcoal do you use for a long cook? Also, how much lit charcoal do you start with? I've been filling my chimney all the way up (it's an el-cheapo, not a Weber, so it's not as big).

Just my preference, but I a bought a cheapo 2 gallon (I think) small bucket, fill it with charcoal and weigh it on a cheapo scale I bought. I use the scale as a way to know how much charcoal to use. For a short smoke of 5-6 hours I'll use about 6-7lbs of charcoal. For longer smokes, 10-12lbs of charcoal will usually be sufficient. So I put the charcoal in the bucket, weigh it, and pour the charcoal out of the bucket into the charcoal basket which is already in my drum. I then use my torch to light the charcoal. Once the charcoal is going good and my drum temp has stabilized at 225 or so, I then place the wood chunks in the charcoal basket and allow it to burn some as well. When I have my desired drum temp, I place my meat in the drum and put the cover on the drum. Using this technique, I've never had to add more charcoal to complete a cook.

So easy a Caveman can do it! These instructions have served me well from the first time I fired up my drum.

I load the charcoal basket to the max everytime. Whatever isn't used i start the next cook with.
