Gran Padano... right ?

Is the mozzarella the store makes lightly salted or unsalted ?

yep, he uses regular moz, buffalo moz and gran padano, then cuts basil and oregano right on the finished pizza. i'll have to check the fancy market for that cheese

i added the basil right at the end and let it melt in a little, then pulled the pizza. this mozzerralla is not very salty, which is good for my bp
