Talking Sat night Pork Steaks - PRON

Cooked some St. Louis style pork steaks and Angus Ball Park hot dogs today. Sample was great, meal later

I have not seen packaged pork called "pork steak" in stores here (they were labeled as pork steak every where when I lived in St. Louis and we had them grilled often).

This package was labeled "pork shoulder". The butcher guy was stocking and I asked if these are what is called pork steak in St. Louis? He said "yes, if you came to me and asked for pork steaks, I would cut up a pork shoulder for you".

So, there you have it. Fark, I'm just an engineering guy that likes to eat BBQ and I don't know meat terminology. Like why is it that when you are in NY, restaurants have Kansas strip steak on the menu and when you are in Kansas City, they call it NY strip steak.

It's a cut from a pork butt... Wait till butts go on sale, pick a nice healthy one and have the butcher slice it 1/2 to 3/4 inch slices and you will be a happy man!
