Default Comfort Food in da drum.

This is not your mother's meatloaf! It's mine! I usually add a jar of salsa to make a Mexican Style Meatloaf. This time I wanted to just get a good BBQ taste. I added a well chopped onion, two tbsp Todd's Dirt, some Simply Marvelous BBQ Seasoning and about a cup of my own bbq sauce. Covered with only a few strips of bacon and into the drum with Kingsford regular, two chunks of Pecan and one of Oak. I also smoked a couple of pork shanks to go in tomorrow's bean pot.
Mashed potatos and mixed veqqies with the Meatloaf certainly qualify for "Comfort Food"!

Looks great! I really like smoked meatloaf, but my wife isn't that crazy about it. I can get by with it though, if I cook her some ribs!
