Default Addicted to Chick-fil-A... anyone have a copycat recipe?

Chick-fil-A opened here in SoCal about three years ago. At first I thought their chicken was gross. It has this sweet pickle taste to it. Then I tried it again a couple years later and got hooked. Anyone know what they do to their chicken breast sandwiches to make it taste the way it does?

Not sure but I think the meat is marinated in some kind of pickle juice then battered. This could also explain why it is so tender. Chick Fil-A is some good stuff.

I did a google search "chick-fil-a recipe" and got several hits with recipes.

Here is one

I think they fry it in a pressure cooker system. I've looked at several recipe's online but haven't tried it. It's just easier to go buy them. If you take their buffalo sauce and slather it all over the crispy sandwich you will be in heaven.

Their website says that the original recipe is pressure cooked and uses peanut oil, so I assume they have peanut oil in the pressure cooker.

I saw nothing in the copycat recipes that would give a pickle taste though.

The secret to great chicken is the pickle juice brine. Judges seem to like it.

recipelink.com has a huge archive of copycat stuff. Chik-Fil-A does use a pressure cooker. If you try it at home, I would strongly suggest that you make sure that you are using a QUALITY pressure cooker. If the vessel fails for any reason things could get really ugly, and really dangerous in a hurry.

As a former employee of the great Chick-fil-A corporation, I can tell you these things about the original chicken sanddwich:

1) Chicken is not marinated. It comes in big old bags of 20 breast with no brine or seasoning added. The only juices in the bag are from the breasts.
2) The spices come to the resturant premixed in the flour. Employees just dump the flour into a dredging pan and dunk the chicken into it after a dip in an egg wash.
3) Floured chicken is then cooked under pressure for about 7 minutes or so. When I worked there, we used the Henny Penny brand of cookers with peanut oil. The oil was changed in the HP's once a week. Usually on Saturday night.

I worked there back in the early 80's so they may have chenged things some, but I would be surprised if they did.

They do have a marinated breast sandwich, but it is not breaded and taste horrible IMHO.

My sons love their chicken nuggets, but I don't. I may be wrong, but I think there is considerable MSG in the batter mixture. To me, MSG has a salty, off-putting taste, and I think I pick it up in the nuggets.

Love those waffle fries, though. With mustard.

I haven't tried the chicken biscuit yet, but the chick-fil-a near me in San Marcos, CA has free breakfast every Friday. I'll go check it out next week. I imagine it'll be as tasty as the original sandwich. Do they slather the biscuit with butter too? :D
