Default C-cold S-smoking

One of my boys asked me to smoke the deer sausage that his group made this last weekend. Luckily they used the narrow casings so that I could use my Hover Grills on the UDS, giving me 4 shelves . I got a late start today (had to wait for the neighbor kid to shovel me out & carry the meat up from the garage. It was 6 farkin' degrees out there today at 2 pm, but the drum held 210* after it was dialed in. I managed to get 27 sticks loaded in there on the 4 racks, and hope to finish the rest of them tomorrow. Here's also a pic of my deflector plate - it's a "Grilling Wok" that I picked up at Menard's for about $8.00. The last pic is the sausage that's still to be smoked.

What kind of casing? Any idea where they got them? It looks like plastic, wondering how the heat & smoke penetrate a casing that does not look at all porous?

I know how you feel with the cold. I've got to cook a couple of chucky's for my wife's office today. Woke up and went to the post office--temperature was -27F. Yikes.

The casings comes From Todd's LTD in Des Moines phone is 515-266-2276 The order number for those caseing is VI-120. They are a calagin casing. They do work real good at taking smoke, plus easy to stuff after sokeing a couple of minutes in warm water.

The only reason I am able to answer all of the questions is I use the same ones. He called and asked me what to buy and borrowed my stuffer.

Yeah, I'm doing the last batch right now at -4*. The first batch was a little too much, so it took about 4 to 4 1/2 hours. The last two batches were about 1/3 smaller, which makes it good in about 3 hours.

Hey, John, I hope he cleaned up the lard press good for ya .
