I don't know if there's enough fat in there to hold it together, you might have to add some ground pork to help it along. Other than that it sounds good.

I don't see why not. You may need to season with some rub as turkey can be kinda flavorless and then you need to think about it drying up as it will be a bit lean. I would think wrapping it in bacon would solve that problem though. You could even make a Thanksgiving fatty stuffed with stuffing and cranberries! Ooooo, now there's an idea. For .99 you can't go wrong with buying a few and experimenting!

Be careful and go easy on the seasoning, ground turkey is sensitive to to much seasoning. At least that is my experience.

I dont see why not. If you look at the label.. some of those turkey products have more fat than beef. People always assume just cause its turkey,, its lean. A lot of places sell turkey burgers, which have more fat than the beef burgers.

I think now would be a great time to call your fatty a special "name" (just like Larry would do).

Yes, but I have found that the turkey breakfast sausage has a better flavor.

I did a fatty with ground Turkey and it held together just fine. Here are some pics, cause I know that's what we all live for.

Ingredients:

Turkey rolled out with some pounded flat Turkey Scallopini, Provolone cheese and some Pumpkin Chipotle Sauce.

Next some collard greens, smoked Gouda Cheese and some sauteed butternut squash, onion, cranberries, raisins and currants.

All rolled up and rubbed in the Bacon Weave (Weighed in at 3 1/2 pounds!)

I was going for the biggest fatty cooked in the smallest smoker prize, cuz this is the equipment.

Here it is all cooked and sliced. It was very tasty and the Turkey held together well.

Thanks for watching and try the Turkey, it's Gobbleicious.

Turkey sausage version was not very good. I don't know why just didn't taste right. Maybe a bad batch of sausage??
