Have any of you ever cooked the brisket comp here? Paul Kirk talked about winning it in Terlingua, when I took his class this summer.

Anyone know if this comp still exists and where I could get info about it??

Back in my days in the Lone Star state, this was always the site for the annual chili cookoff.
(also inspired a Jerry Jeff album, Viva Terlingua.)

Maybe they have a brisket comp on the side.

There is no such thing as vagatarian chili. There is beef soup but chili has meat a NO BEANS! That's just the way it is....its a Texas Thang.

To me, chili has beans in it. Without beans is just sauce and stew meat (though it is good).

There should be NO BEANS "cooked" in chili!!!
Not if your eating "REAL" Chili, which is the only kind worth eating.
You won't find any beans in a Chili cookoff ANYWHERE here in Texas, and we got a lot of "ANYWHERE" here!

BUT - Having said all that. If i make chili for company, there will always be someone (not from Texas) who like's beans in their chili, so for that reason i always make a small pot of good beans (2/3 pinto 1/3 kidney).
IF you must have beans in it, always add the beans to your bowl of chili just before eating it. NEVER NEVER NEVER cook the beans WITH the chili, it messes up the chili, (generally turning it to chunky paste), and in most places around this state you could be shot for doing it - ESPECIALLY in Terlingua!

Granted, I'm no Chili afficianado, so I'm used to beans in mine, except when it comes to Chili Dogs!!

But back to the meat of the topic- I took Paul Kirks class last year and helped out at his class this year, and do recall him mentioning winning Brisket at Terlingua, but I think it was some time ago. His website might have info on it. Bob Lyons is a friend of PK's and helped start the PNWBA and I was asking about the history of BBQ in the Northwest and was told it evolved from Chili cookoffs and Terlingua was were they became friends and BBQ cooks.

Yes, they still have the brisket cookoff behind the store. I believe the contest is held on Friday before the Chili cookoff. We cooked the contest in 2005 with Paul Kirk and Bob Lyon. Bob claims this was his last trip to Terlingua, I hope that is not true. We were fortunate enough to win the brisket competition in 2005. If you have never been to Terlingua it is a place you need to visit at least once. Unfortunately, there is no money involved to help offset the cost of such a long trip.

I have heard talk of a reunion of the past champs next year.

AWESOME! I will check it out. I have never ventured behind the store...I will be at TICC from Wed - Sun this year but have volunteered to help run the salsa comp with Jeff Nester this year. He is a previous World Champ in Verde.

Hopefully I can compete in it next year. Or do you need to be qualified like for the Jack and Royal?

Anyone interested in putting a Brethren Team togehter????

It is definitely worth the cost. This will be my 4th trip to TICC, gets better every year!
