Have the parents in town this weekend, so I had to do some cooking for them. Did some girls in boats (chicken breast in sauce) with string beans and jasmine rice. The parents fell in love with the UDS.
Got a 10# pork butt on there now for a covered dish lunch tomorrow. Also going to throw on 4 fatties in the morning.

I borrowed the recipe from another forum. It looked intresting, so I thought I would try it and it turned out great. Use skinless, boneless breast rubbed with your favorite poultry rub. Let set in fridge over night in a ziplock bag. The sauce recipe is:
3 large spoons of mayo 3 large spoons of yellow mustard 2 large spoons of minced garlic 3 large spoons of dried onion flake 3 splashes of sesame seed oil (I used veggie oil) 2 splashes of cider vinegar About 1/8 cup of honey Small handful of poulty rub Place rubbed breast in foil boats and cover in sauce. Place on smoker @ about 235* for about 45 mins. or until you reach internal temp of 180*. These do cook quick, so keep an eye on them. Then enjoy.

Does the smoke penetrate the sauce and get to the chicken, or do you end up with smoked sauce covered chicken? Looks good whichever way it goes though...

It penetrates the sauce the best I could tell, nice mild smokey taste. The sauce will boil while on the smoker. It was IMHO it was the best chicken I have ever put in my mouth.

It does look good. The sauce tends to have a asian look to it. Considering the sesame seed oil. So the jasmine rice makes sense.
Not a big fan of mayo, but I would assume that the mustard and cider would offset it. Might have to try it.

You can't really taste the mayo at all. Try it, I think you will like it.
