First Cook on the UDS

Thought that it was time to break-in the UDS. Started building it last week and had to have it done by Sunday, since we are feeding the family. Got the UDS Saturday and seasoned in that night. Held a good constent temp. Started out with 3 racks of babybacks and my first ever attempt at a fatty. Put everything on about 11:45 and everything was done around 4:00. So, on with some pron.

Brother that all looks mighty fine! Gotta love the drums. Fatty looks perfect. Like Larry said, you'll usually need to cook more than just one fatty cause they go quick. Nice cook on the ribs to!

I loved the way that it cooked. I had a few good pointers from some of the other members before I cooked, and as you can see, I think I did pretty darn good. No complants from the family either, and they aren't use to "red" bbq. Everything had a good smoke taste, but not over powering. The fattys were the big hit, nobody had ever heard of them. . . . except I got a few wierd looks from my brother-in-law (SC State Trooper) when I told him I smoked a fatty.

Thank You for answering my questions in the other thread!!!! There will be several fattys next time. 1st. one was a simple one. . . . Tennessee Pride-Hot, cream cheese, and Plumrose thick cut bacon wraped.
