Well she is done.... well done enough for now.
I was planning on a couple of fatties only. After much groaning, I ran out last night and bought a cryo of spares for the family too. Trimmed em up, rubbed em down threw back in the fridge last night. The fatties and 2 racks have been on the smoker for around one hour now. Smoker smells great and is cruising around 235. As I have never done fatties before, what temp do I want to pull themm off at? Going to try and follow 4-1-1 for the spares but judge on the bend test. I will do my best to provide a some pron when the food comes off.

You want to pull the fatties at about 160 degrees. Foil them and let them rest for about an hour or so. Good luck on your first cook.

Remember UDS run hot in center. Dial gauge on side if equipped to 200. Will be 230 ish in center.
