Default Any Last Minute Vending Advice??

I've got my first big vending gig this weekend. Exclusive food vendor at the Mid-NE Americana Festival.

Got the meat, sides, forks, plates, trailer.........insurance, HD approval, etc.
I've vended before but never on this scale. I'm starting to chit down my leg with nervousness, thinking I will crash and burn because I forgot something.

Little help??

Make a time line, start at the point you're ready to sell and work backwards to your time to start cooking, then add an hour or two to get some leeway.

Remember that just because you can start the sales at 9:00 AM, it doesn't mean that there will be a flood at the beginning, though once a few have bought things and moved away, the numbers will build to a peak over the lunch hours, then peter out for a while then build again to an evening peak.

Good luck, plan well, work hard.
