Default King City Showdown Pics and Pics!

Looking at the pics I realize I have a long way to go! Not my best performance but I was not DAL and that was my goal not to be.... Its only up from here....

I liked the Pork box the best but work on evening out your lettuce. Try thinning your sauce with a little apple juice so it will have a smoother appearance on your chicken.

Take your brisket out of the smoker a little earlier and use a very sharp knife to avoid those crumbles around the ends. You will also be able to slice your meat a little thinner. You want your slices to be the width of a number 2 pencil. Judges know that if you slice it thick, you probably overcooked and your trying to keep your slices from fallign apart. Extra thin slice indicate that the brisket is under cooked and you are trying to fool them into thinking that it is tender.
