2 cans diced tomatoes
medium onion, diced and sauted
1 t cumin
1 t Hungarian paprika
salt & pepper

I added some mexican oregano for garnish when plated.

The Hungarian paprika is a spicy paprika.

The idea for the recipe came from here.

http://www.bbc.co.uk/food/recipes/da...eg_86797.shtml

We make a little different variation by poaching the eggs outside of the dish. My wife came up with the garlic toast idea, which made the dish complete, IMHO. It was REALLY good and something I would have never have thought of.
