McWalleye Burgers

Tried out a new recipe for McFish Burgers. I used walleye. After processing ingredients in food processor, they came out a tad "mushy" so I rolled them in some panko. Fried in butter and served with a dollop of homemade wasabi mayo. mmmm good!

That should be a criminal act to do that to a walleye,I can see doing it to salmon but never a walleye!It does look good however...

why? ya got some walleye left? :)

it's :
1lb walleye fillets
1 egg
2 tablespoons chopped dill
1 scallion
1/4 cup breadcrumbs
2 tbsp mayo
1 tbsp white wine

i think i may have...well..."overpulsed" (tito's mod)..go easy so it's still somewhat "firm".
