Crackerjack, don't worry about the UDS thing. My 10 year old son will be building one this weekend, a tribute to the ease of construction. Get Norcoredneck's pdf on the build. It is super comprehensive, and is proven in battle.

You can't go wrong with eaither as people have said. I love my WSM's and am going to build a UDS once I find a suitable drum. The trick is to find a food safe drum that had safe stuff in it. then the next trick is finding an unlined drum. Now, a lot of people get lined drums and build a fire in them and burn out the lining. That's OK for a lot of people. You just have to decide if that's right for you.

If you want to play with fire, look for a stick burner, something you can burn either logs or charcoal in.

If you want to play with fire than then forget about the WSM's or UDS's. All of the folks that own them like to talk about 5, 6, 7 hour cooks on one load of charcoal. The ergo's also really suck on either one and you have to bend over and stick your head in the smoke whenever you want to do anything with them, like checking the fire or meat, saucing the meat, flipping the meat, or hell just about anything.

If you want to play with fire then go with the Bandera or an offset. The SKD is the newer model of the Bandera, now made by Brinkmann. They don't come anywhere close to the New Braunfels Bandera's as far as quality and craftsmanship. If you can find an NB used I would grab that. If you want a decent offset for under $200 go get yourself a Chargiller with the side fire box.

Do the mods listed here on either one of these units and you will have a nice stick burner/charcoal fired cooker that should satisfy your pyro needs and feed your belly.

I should tell all you UDS guys I was just messin wid ya. There is too many great cooks on this forum that use the drums with great success for them to not make a good cooker.
