This stuff is awesome!! I did add a can of mexi-corn in the mix and some shredded cheddar on the top.!!

Ok, real dumb question here........what is Mexicorn? Whole kernal corn in a hot pepper sauce or what?
Never heard of it nor seen it on our store shelves here.

I believe it is corn with pimentos that are chopped up. They sell it in a can. Usually with regular corn.
