Default Portion Question

I am helping a friend of mine this weekend cook for the fights at his bar. He told me I could cook some of my BBQ and sell along with the carne asada tacos we will be selling. I'm going to do pulled pork sandwichs and I need to know what size the portions need to be to make a good sandwich. Should I offer a couple of different sauces as well? I have a Sweet, Sweet spicy, and a sweet spicy vinegar. This is my debut and I want it to be good. Any help would be of great help Thanks!!!!!!!

3 servings / lb or 5.33 Oz / serving in a bun.

This will overfill a standard bun, and make a good impression about the amount you serve.

You can also serve on smaller plates instead of larger plates, this fools the eye but not the stomach, so if you want to fool both, use medium plates 5.33 Oz over flowing the bun, and two 4 Oz sides.

That's a tough one. We do about 6oz cooked but we did a party this year where they thought that was too little. I told him if he wanted to feel ripped off he could go down the street the "bbq" chain everyone wants to compare us to and see how much a pulled pork sandwhich costs there - 7.50 for 4oz!

As someone once told me on this very forum - don't undercharge to beat the competition - charge what you feel comfortable with. Your bbq is done right instead of on an oven in some retail chain.

Or you could get smaller buns

As a "consumer" I would want to put it on myself.
I always ask my potential "taste testers" how they like something, and invariably most say they like this sauce or don't like that one, some like none at all.
Besides, if your 'cue is good,they won't need any sauce!

Gig went well. All the pork sold. My bbq sauce even beat out a commerical sauce. Had a very good day. Thanks for all the help and info.
